I made something tonight that I’ve been wanting to try for awhile: stuffed red peppers!
I started with two red peppers. I chopped off the tops then cleaned out all the guts.
I chopped up a bunch of fresh veggies! I used red onion, zucchini, summer squash, garlic, and cut out some bits of red pepper from the tops. I sauteed these with some extra virgin olive oil, kosher salt, and Italian seasoning.
After about five minutes, I added in some bulgar that I had precooked on Sunday, and I let that all heat up together for another couple minutes.
I added some of the mixture to each of the red peppers and topped with a little blue cheese. They went into the oven which I preheated to 350 degrees for 30 minutes.
The finished product! Don’t they look delectable?
When I made them again, I think I’ll use a bit more seasoning and mix in some cheese in addition to what I sprinkle on top.






Those look really good. I adore red peppers, but my boyfriend does not. At all. The bulgar looks really tasty in this colorful dish!
You could do stuffed tomatoes, maybe? Same basic idea, different “shell”.
I’ve been meaning to make stuffed peppers for along time. I’ve never made them before but I think they would be really good and I’m sure my husband would like them too!

Adding blue cheese is a great idea! I love blue cheese. I made sure to get some this week to cook into some dinners. I can’t wait to have it.
