07.27.10

I did my first official training run for the half marathon! I did 2 miles in 21:18 (10:39 pace). I tried to do a little speedwork, but more than anything, running the whole time. I did end up walking 1/10th of a mile, but overall I was pleased.

After my usual breakfast of cereal, I had a midmorning snack of a piece of danish that a coworker brought in. I probably could have eaten three more pieces (but I didn’t). I love sweet stuff like this. Definitely a weakness.

My sister (not the one I was visiting this weekend, but my other sister) and one of her kids met me for lunch! What a treat! We went to a local place, The Omelette Shoppe, and I had my usual: the California veggie omelette with egg whites (it comes with avocado, tomato, green olives, mushrooms, and sprouts) and English muffin toast with their homemade jam. I cleaned my plate!

I can’t lie, a big reason I eat there is because of the homemade jam. It’s like candy, it’s so good!

After my run, I came home and fired up the oven to make vegan enchiladas! I used refried beans, Morninstar crumbles, and veggie cheese. I definitely should have read the instructions for the enchilada sauce before I left the store because I didn’t realize that it took two cans. Oops! So, the sauce was a little sparse, but overall, they were tasty! I made a disaster of my kitchen in the process, but it was worth it!

I ate about one and a half for dinner.

Looking back, I definitely didn’t get enough fruits and veggies in today. I need to start doing a better job of eating those earlier in the day so I don’t have this revelation at night.

    Congrats on the run!! I love danises, too. That omelet looks absolutely amazing. I bet it was so delicious. Sounds like you had a great day. Plenty of your food had veggies, so don’t be hard on yourself.

    That omelette is the stuff my dreams are made of – perfection! Great job with the run this morning. I’ve been running a lot lately and find myself much hungrier!

    I will be starting training for a 1/2 marathon this Sunday. (20 week program).

    Cracks me up that your sweet stuff looks like you have a bottle of beer in the corner. (I’m sure you’re just carbo loading. 🙂

    Congrats on the run! I’m a newbie runner training to complete a half marathon hopefully next year at the Disney Princess Half!
