Just a little over 24 hours until I hit the road for Chicago! I have to admit, I’m a bit jealous of everyone arriving in the city today. But, tomorrow, tomorrow, it’s only a day aaaa-waaaaayyyy! Yes, I love musicals, including Annie. What can I say?

Last night’s dinner was the rest of the guacamole I had made a couple days ago. I wanted to eat it up before it went bad.

If I’m being honest, when it comes to dips (especially guacamole), the chips are just a tool for getting the good stuff in my mouth. I pile it on…which for things like guac or salsa, not so terrible. But, for things like spinach artichoke dip, I have to be careful. I think I could eat a day’s worth of calories in that alone!

This morning, I had something I have been anxiously awaiting to try: overnight oats in a jar! I finally had an almost empty jar of peanut butter, so I put it all together last night.

I used: 1/3 cup oats, 1/3 cup soy milk, and a 6 ounce container of strawberry Chobani. The verdict? Nom, nom, nom!

I will most definitely be enjoying that creation again! Hopefully sooner rather than later!

I’m in the midst of working on a packing list for Chicago while eating my lunch. Yes, I’m definitely using my lunch break to blog. Is that a bad habit to get into? Probably, but I’m okay with it. Usually, I like to venture away from the office or sit and read, but today, hello blog! I am finishing off the remainder of the bulgar/veggie mix. I learned my lesson yesterday and brought some blue cheese to sprinkle on top.

How do you spend your lunch break? For awhile, I was in the bad habit of working through lunch. Not healthy. I fully believe that mental health breaks are so important!
