Friends!  I did some updating to just a one girl revolution.  I have a new header and switched up the colors in the layout to match.  It’s nothing too fancy, but I like the simplicity of the design.

And, although I created the Facebook page quite awhile ago, I finally spent a bit of time tweaking it today.  Go check it out and if you feel so inclined, it would be epic if you “like” me!  (Pretty please?)

So, clearly I’ve been productive tonight.  Or starting a computer screen most of the evening.  Whichever you prefer, but I think productive sounds so much better.

Since I’m laying low tonight and really wanted some good comfort food for dinner, it was time to break out the recipe for my mom’s cinnamon pancakes.  By break out, I mean call her and have her give it to me for the 30th time because I can never seem to remember where I wrote it down the last time.

Pancakes are, by far, one of my favorite breakfast foods.  Quite possibly THE favorite.  I made myself one larger sized pancake and saved the rest of the batter for later.  Despite having written the recipe down literally minutes before I started making the batter, I somehow still messed it up.  1 1/4 cups flour (what the recipe actually calls for) is not the same as 1 3/4 cups flour (what I actually used).  I added a bit extra almond milk to thin it out.

Then, I proceeded to burn the bottom.  Clearly, I just should have gone with my gut instinct and driven 45 minutes home to have my mom make them herself.

Alas, I didn’t.  This is nothing that a little Cracker Barrel maple syrup that just happened to be sitting in my cupboard couldn’t mix.

Seriously, I love Cracker Barrel simply for their cute mini-bottles of syrup.
