Morning, friends!  As I was trying to fall asleep last night, I came up with this little treat of a breakfast.  Okay, so in all likelihood, I’ve seen something quite similar at some point in the blogworld, so the ingenuity is probably not all mine.  Whoever the credit is due, it’s still tasty!

Cut up an apple into 1/2 inch chunks (use an apple slicer/corer and cut those pieces in half…works like a charm).  Sprinkle generously with cinnamon and bake in the toaster oven on the “warm” setting for 12 minutes at 400 degrees.

Just as those come out of the toaster oven, in your favorite breakfast bowl, combine together:

  • 1/3 cup vanilla Greek yogurt
  • 1/3 cup rolled oats
  • baked apple chunks
  • 1 tablespoon peanut butter (I used honey roasted cinnamon)

Put the peanut butter directly on top of the apples and it will get all warm and melty (aka heavenly!).  YUM!

It was a super tasty combination and a great way to start the day on a cold winter morning!

    I just love the smell of baked apple. This sounds really perfect for breakfast.. it’s so warm and comforting 🙂
