eleven glorious days.

It felt really great leaving work today, knowing I don’t have to go back until 2011! Don’t get me wrong, I love my job, but long breaks are awesome (especially when they involve using only three vacation days!).  Eleven glorious days off makes for a very happy Mindy!

lunch.

One of the ladies that I work with was feeling generous today and bought pizza for lunch for everyone on our floor that was working today.  The irony is that just an hour or so before, I was talking with someone else about how good pizza sounded.  It’s like she read our minds.

I started with two slices of veggie.  I ended up having a third (which also ended up being one too many).

And, a cookie for dessert.

After work, I headed to the Y for my fifth day working out in a row.  Setting a record here, people!  Seriously, I don’t remember the last time I’ve been truly consistent with exercise, so hopefully this is a good start!

I did two miles of intervals on the treadmill.  I ran for .25 mile then walked from 0.05 – 0.1 mile for an overall time of 22:59.  My speed is still slow, but I know that will get better as I get back into a running routine.

Afterward, I did 3 sets of 10 push-ups and 30 crunches (10 regular and 10 bicycle on each side).  I can tell that cross training and strength training really is going to be so key to improving my running.

dinner.

My meal tonight was what I intended to have for lunch and something I’ve been craving all week:  chips and cheese with a trio of dips: guac (love), salsa, and sour cream.

I’m off to watch How the Grinch Stole Christmas!  I love the live action version!  Jim Carrey plays the Grinch so well!

    I love love eating chips, salsa, guac and black beans for dinner! It’s so satisfying and somehow you get all the fiber, protein and carbs you need! 🙂
